The Earth & Soul Mushroom Stew

Craving something warm, hearty, and deeply satisfying that makes your whole kitchen smell like heaven? This mushroom stew is pure comfort in a bowl! It's the kind of recipe that feels like a warm hug after a long day - rich, earthy, and incredibly nourishing.

I love making this with the cleanest ingredients possible - organic mushrooms, fresh herbs when I can get them, and high-quality olive oil. There's something so grounding about cooking with ingredients that come straight from the earth, and mushrooms are nature's little powerhouses packed with nutrients and umami flavor.

The magic happens in under 30 minutes with just one pot, but the flavors are so deep and complex you'd think it simmered all day. It's naturally vegan, gluten-free (with a simple flour swap), and perfect for anyone wanting plant-based comfort food that actually satisfies.

CLEAN INGREDIENTS (Choose organic when possible)

– 1 tablespoon extra virgin olive oil (cold-pressed)

– 1 leek, white and green parts finely diced (or organic onion)

– 4 garlic cloves, minced

– 2 heaping tablespoons tomato paste

– 1 medium tomato, finely diced

– ¼ cup white wine (optional)

– 1 tablespoon rice flour (or gluten-free flour)

– 2 teaspoons dried herbs (rosemary, thyme, marjoram mix)

– 16 oz mixed mushrooms, sliced (cremini, shiitake, maitake - whatever you like!)

– 2 tablespoons tamari or soy sauce

– 1½ cups mushroom or vegetable stock (low-sodium)

– Sea salt and freshly ground black pepper

– 2 tablespoons fresh parsley, chopped

METHOD

  1. Build the flavor base - Heat olive oil in a wide pan over medium heat. Add leeks and garlic, season with salt and pepper. Sauté until soft and fragrant, about 5 minutes.

  2. Add the umami magic - Stir in diced tomato, tomato paste, and wine if using. Cook until liquid evaporates and everything smells amazing.

  3. Thicken naturally - Sprinkle in rice flour and mix well - the vegetables will absorb it quickly.

  4. Let the mushrooms shine - Add your beautiful mushrooms and let them cook for 5 minutes, stirring occasionally as they release their earthy goodness.

  5. Bring it all together - Add herbs, tamari, and stock. Mix well, cover, and simmer for 5 minutes until thick and flavorful.

  6. Finish with love - Taste and adjust seasoning, then stir in fresh parsley.
