For the Salmon: – 2 pounds wild-caught salmon fillet (skin-on preferred)
– Sea salt
– 1 large organic lemon (for slicing and serving)
– Fresh parsley for garnish
For the Lemon Garlic Sauce:
– 2 large organic lemons (zested and juiced)
– 3 tablespoons extra virgin olive oil (cold-pressed, high-quality)
– 5 garlic cloves, finely chopped (organic)
– 2 teaspoons dried oregano (preferably organic)
– 1 teaspoon sweet paprika (organic) – ½ teaspoon freshly ground black pepper
METHOD
Prep your oven - Position racks in center and 6 inches from broiler. Preheat to 375°F. Line a sheet pan with foil and brush with olive oil.
Make the magic sauce - Zest one lemon into a bowl, then add juice from both lemons. Whisk in olive oil, chopped garlic, oregano, paprika, and black pepper.
Prepare your beautiful salmon - Pat dry and season well with sea salt on both sides. Place skin-side down on foil. Pour the lemon garlic sauce over the top, spreading evenly.
Add the finishing touches - Slice remaining lemon into rounds and wedges. Place rounds on top of salmon for gorgeous presentation.
Wrap and bake - Fold foil over salmon, creating a tent with air space above. Crimp edges to seal. Bake 15-20 minutes until almost cooked through.
Golden finish - Open foil, switch to broil for 3 minutes until lightly golden and fish flakes easily.
